Cauliflower has been the star of the veggie aisle for years thanks to its magical powers and low carb content. This is by far our favourite cauliflower recipe. Sticky-sweet, spicy & tangy, it's perfect as a side dish or a healthy and light meal on its own.
INGREDIENTS ------------------
1 medium cauliflower, cut into florets 2 tbsp olive oil 1/2 tsp unrefined salt freshly ground black pepper BBQ Sauce 2 tbsp sugar-free ketchup 2 tbsp maple syrup 1 tbsp soy sauce 1 tbsp chili sauce / sriracha 1 tsp freshly grated / finely chopped ginger 1 tsp Tom Yum paste Garnish chopped roasted peanuts & fresh cilantro
METHOD ------------------
Preheat oven to 180ºC and line a baking tray with baking sheet. Toss cauliflower florets in olive oil, salt & pepper and spread out on baking sheet. Bake for ca. 20 minutes, flipping once halfway through, until golden and lightly charred but still crunchy.
Meanwhile, prepare Asian BBQ Sauce by placing all sauce ingredients in a small bowl and whisking to combine.
Drizzle half of Asian BBQ Sauce over roasted cauliflower, and toss to coat. Place cauliflower back in the oven, and bake for further 10 more minutes, tossing few times, until caramelized.
Transfer cauliflower to a bowl or serving platter and drizzle with the remaining sauce. Garnish with roasted chopped peanuts and fresh cilantro.
