Full of goodness, free from gluten, sugar and dairy. Incredibly easy, fabulously delicious vegan brownie.
INGREDIENTS ------------------
1 can / 240g black beans, including water
8 large pitted dates
1 cup cacao powder
4 tbsp oat flour
2 tbsp coconut oil
2 tbsp maple syrup
1 cup oat milk
1/2 tsp salt
1 tsp organic baking soda
2 tsp apple cider vinegar
Toppings:
80g vegan dark chocolate / chocolate drops
2 tbsp finely chopped cashews
Fresh raspberries [optional]
METHOD ------------------
Blitz all of ingredients in a blender except for the dark chocolate. Pour the dough into a springform tin and bake for 30 minutes at 175C.
Melt the dark chocolate and pour over the cake. Sprinkle with chopped nuts. Let the cake set for one hour before serving. Serve with fresh berries if you like & enjoy with a cup of good quality espresso.
