SPICY TOMATO HARISSA SOUP

The perfect winter warmer. This spicy soup is quick and easy to make and is super healthy too. Sweetness of tomatoes, smokey fiery harissa paste, and creamy vegetables all come together to create a delicious rich bowl of tomato soup that’s full of a flavoursome twist on the classic.









INGREDIENTS ------------------


4 large ripe tomatoes, peeled and cubed

400 g canned tomatoes

1 large carrot, sliced

3 potatoes, peeled and cubed

1 onion or large shallot, sliced

3 garlic cloves, chopped

1 tsp vegan butter or cooking oil

5 tbsp tomato puree

3 - 4 tsp harissa paste

2 - 3 tbsp unrefined salt

1 tsp smoked paprika

1 tsp sweet paprika

1/2 tsp turmeric

1/2 tsp nutmeg

1 tsp savory or thyme

1 tbsp maple syrup [optional]

filtered water [as desired]


garnish options:

black pepper, full fat coconut milk, nigella seeds, cilantro, fresh parsley








METHOD ------------------


  1. Heat the vegan butter or cooking oil in a large soup pot over medium heat.

  2. Add onion, pinch of salt and sauté for few minutes until onion has caramelised. Add garlic and cook for 1 – 2 minutes more.

  3. Add all the dry spices and cook for another minute, allowing spices to release their flavour.

  4. Stir in fresh tomatoes, carrot, potatoes and cook for 5 minutes under cover until bubbling.

  5. Add canned tomatoes, tomato puree, maple syrup [if using] and harissa paste and cook until potatoes and carrots have softened, ca. 10 minutes.

  6. Blitz with a hand blender until smooth.

  7. Add a desired amount of filtered water, depending on how dense you want the soup to be.
