BETTER BURGER


One of our best vegan burger, after months of experimenting.

This burger is not only healthy, but it has a perfect texture and exudes a wonderful barbecued flavour thanks to an infusion of hickory.

It is gluten-free and inexpensive compared to similar store products.


The success of the burger is down to the use of TVP [Textured Vegetable Protein], also known as soy meat.

TVP is a rich protein source with virtually no fat and it is great at absorbing flavours during cooking. Quick and easy to cook with a nutritional protein boost that doesn’t cost a fortune. Textured vegetable protein is made purely from soy flour, with the soybean oil extracted before the dehydration process.




INGREDIENTS ------------------


makes 6 - 7 medium size burgers


300 g cooked white or brown short grain rice

250 g Textured Vegetable Protein [TVP]

375 ml vegetable broth

2 tbsp coconut oil solid and chilled, not melted

2 tsp grapeseed or other cooking oil

40 g arrowroot flour [or potato starch]

2 tsp unrefined salt, eg. Himalayan

1 garlic clove, minced

1 tsp black pepper

2 tsp black garlic paste

1 tbsp liquid smoke [do not skip this]

pinch red pepper flakes or 1 tsp sriracha

1 tsp soy sauce

2 tsp tomato puree

1 tsp smoked paprika

2 tbsp beetroot concentrate for colour



METHOD ------------------


  1. Cook the short grain rice according to package directions and set aside.

  2. Place TVP in a bowl. Bring vegetable broth to a boil and pour into the TVP. Let it sit for a few minutes for the TVP to absorb the liquid. Stir with a fork.

  3. Add the TVP, rice, and the rest of the ingredients to a food processor and pulse until well mixed but not too much so it keeps its texture.

  4. Shape the mixture into patties.

  5. Add small amount of cooking oil to a large pan and place it over medium heat. Add as many patties as will fit in the pan without crowding. Cover the pan with a lid and first 'steam' the patties for about 10 minutes flipping halfway through.

  6. Next, remove the cover, turn the heat to medium/high and fry the patties for another 6 minutes or until lightly browned. Flip regularly.

  7. Remove the patties from the pan, stuff into [gf] buns and top with accompaniments of choice. Serve & enjoy.
