Walnuts are one of the top super foods packed with healthy fats, antioxidants, vitamins, trace minerals, protein and fiber. The essential fatty acids omega-3 and 6 in walnuts help improve memory, cognitive and motor functions.
Consuming walnuts also helps the skin look younger and healthier due to the powerful antioxidant, vitamin E. Who wouldn’t want younger, healthier and more supple-looking skin?
And then of course there’s the tofu, a great source of protein, essential amino acids, minerals and vitamins.
INGREDIENTS ------------------
1 block silken tofu
150 g walnuts, soaked in cold water overnight [or in hot water for 15 min]
3 tbsp of water retained from soaking the walnuts
fresh ginger, 2 cm piece, peeled and roughly chopped
1 tbsp mild extra virgin olive oil
1 tsp unrefined salt
1 tsp nutritional yeast [optional]
METHOD ------------------
Add all ingredients to a food processor and pulse until well-combined. Alternatively combine all ingredients in a large jar and use hand blender to blitz. The final mixture should be creamy and fluffy.
TIPS:
If you didn't soak your walnuts ahead of time, you can soak them in boiling water for ca. 15 minutes.
