QUICK & EASY. HOMEMADE AND FREE FROM ANY PRESERVATIVES.
INGREDIENTS ------------------
240 ml organic apple cider vinegar
120 ml soy sauce [low in sodium]
25 g Xylitol crystals or 50 g light-brown sugar
1 tsp ground ginger
1 tsp ground yellow mustard seed or dry mustard
1 tsp onion powder
1 clove garlic, minced
1/2 tsp ground cinnamon
1/2 tsp freshly ground black pepper
1/4 tsp chilli flakes [optional]
METHOD ------------------
Place all ingredients in a medium saucepan. Bring to boil. Reduce heat to a simmer and cook until liquid is reduced by half, ca. 20 minutes. Strain through a fine-mesh sieve and allow to cool completely before using. Worcestershire sauce may be stored in an glass container, refrigerated for up to 3 months.
