LINGUINE PUTTANESCA WITH EDAMAME & SHIITAKE

FEATURING EDAMAME & SHIITAKE MUSHROOMS ALONG WITH THE TRADITIONAL INGREDIENTS OF A PUTTANESCA RECIPE.


Edamame contains complete protein, meaning the beans provide all of the essential amino acids. The beans are also a source of healthful polyunsaturated fats, especially omega-3 alpha-linolenic acid. Soy foods contain isoflavones, a type of antioxidant that may help lower the risk of osteoporosis and cancer. Consuming soy products as an alternative to full fat dairy products helps improve cholesterol levels. Edamame also contains folate, which the body needs for proper cell division. Past studies suggest that having an adequate folate intake may help prevent depression. Edamame is also rich in the antioxidant kaempferol, which has been shown to cause weight loss.

INGREDIENTS ------------------


serves 2


200 g [gluten free] linguine

1 tablespoon cooking oil

1 shallot

2 garlic cloves, sliced

60 g edamame

8-10 shiitake mushrooms

2 large, organic & ripe organic tomatoes, chopped

handful capers

handful black olives

3 tbsp tomato puree

1 red chilli pepper, deseeded & chopped

1 tsp unrefined salt

freshly ground black pepper

fresh parsley to garnish

grated Parmesan or Vegan alternative, to garnish






METHOD ---------------------


  1. In a large pot, bring salted water to boil. Cook pasta as per instructions.

  2. Meanwhile, heat cooking oil in a large frying pan. Add shallot & garlic and saute for 1 minute over a low heat.

  3. Add mushrooms & edamame and continue to sauté for another 2 minutes.

  4. Add tomato puree, capers, olives, chilli pepper and continue to cook for another 3 minutes.

  5. Add chopped tomatoes and continue cooking for another 2 minutes.

  6. Drain pasta and return to pot, add vegetables and mix well. Garnish with parsley & black pepper.

  7. Serve with Parmigiano vegan alternative.
