THE BEST VEGAN 'LOBSTER' ROLLS


Incredibly easy & quick to make, these vegan 'lobster' rolls, are seriously delicious and they taste like the real deal.







INGREDIENTS ------------------


Makes 4 rolls


1 jar / 450 ml hearts of palm, roughly chopped

1/3 cup celery, finely diced

2 tbsp scallions, finely chopped

1 tbsp fresh parsley, finely chopped


Mayo mixture:

3 tbsp vegan mayo

1 tbsp dry seaweed, crushed in mortar

1 1/2 tsp dijon mustard

1 tsp white miso paste

1 tsp [homemade] sugar-free ketchup

1- 1 1/2 tsp sriracha or vinegar based hot chilli sauce

1 tsp apple cider vinegar

1 tsp lemon juice

1/2 tsp sweet paprika

1 tsp dry tarragon

1/2 tsp Himalayan salt

METHOD ---------------------


  1. In a medium bowl, whisk together all the 'mayo mixture' ingredients until smooth.

  2. Drain liquid from hearts of palm, then roughly chop them, leaving some pieces bigger to mimic the texture of lobster meat. Add hearts of palm, celery, scallions and parsley to a bowl and toss in mayo mixture until well coated.

  3. Serve in a vegan, lightly toasted & buttered buns. Enjoy!
