SUN-DRIED TOMATO & CANNELLINI BEAN BURGER

THIS BURGER HAS IT ALL: TEXTURE, SUCCULENCE AND A DELICIOUS DRESSING. IT IS LOW CALORIE AND HEALTHY TOO.

ULTIMATE BEAN & TOMATO BURGER



INGREDIENTS ------------------


makes about 8 burgers, depending on size


400 g cannellini beans [soaked overnight and freshly cooked]

1 shallot, chopped & sauteed

6 - 8 sundried tomatoes, roughly chopped

3 tablespoons tomato puree

8 - 10 cashew or walnuts, chopped or blitzed in mortar

1 teaspoon french mustard

1 garlic clove

1 red chilli

3 tablespoons oil [e.g. extra virgin olive oil, grapeseed or nut butter]

spices: paprika, oregano, cumin, turmeric, chimichurri mix [or use your favourite spices]

unrefined salt to taste

freshly ground black pepper


fresh herbs [roughly chopped]: parsley, coriander, mint


5 tablespoons gluten free flour [e.g. arrowroot, chestnut or tapioca flour]

2 teaspoons milled linseed or flaxseed

1 teaspoon chia seeds





METHOD ------------------


1. In a food processor combine cooked cannellini beans with tomato paste, garlic, nuts, spices, and other liquid ingredients and blitz until almost smooth, it’s okay if there are still some whole beans visible. It will give burger some texture.


2. Add the onion, fresh herbs and process for another few seconds.



3. Transfer the mixture to a bowl and stir in the gluten-free flour and linseed (or flaxseed). The mixture will instantly thicken into a soft mix. Knead for 2 minutes.


4. Shape the mixture into patties depending on the size you want.


5.[optional] Wrap patties in parchment paper and refrigerate for ca. 2 hours. Steam the burgers for 5 minutes before frying/grilling. Steaming the patties will make them extra juicy.




6. Next, heat the splash of cooking oil in a large frying pan over a medium heat, add the patties and fry 10 minutes or until cooked through. Flip the patties several times during cooking. Alternatively, if you have Ninja Foodi, Air Fry the patties for approx. 20-25 min. on 180°C.


7. Serve the burgers in gluten free buns, topped with your choice of toppings such as: slice of vegan cheese, tomato, vegan sriracha mayo, pickled cucumber, sugar-free ketchup, soy sauce glazed mushrooms, salad leaves & home-made fries or potato wedges.
