INGREDIENTS ------------------
makes 4 burgers
For the Burgers
1 extra firm tofu [200 g]
1 small onion
1 tsp black garlic paste [optional]
1 tsp cooking oil
1 small carrot, grated
1 small red bell pepper, roughly cut into large chunks
2 mushrooms, sliced
1/2 tsp unrefined salt
1 tsp oregano
handful chopped basil
2 tbsp chopped walnuts
1/2 tbsp liquid aminos [or soy sauce]
1 tsp liquid smoke
1 tsp tomato puree
1 tsp mustard
2 tbsp tahini [or nut butter]
1/2 cup linseed [or gf breadcrumbs]
unrefined salt & freshly ground black pepper, to taste
For the Maple Mustard Mayo
2 tbsp vegan mayonnaise
2 tsp mustard 2 tsp maple syrup
1 tsp unrefined salt
METHOD ------------------
Place grated carrot, chopped red pepper and sliced mushrooms in a food processor and pulse briefly, making sure it doesn’t turn into a mush.
Heat cooking oil in a large pan and add chopped onion & salt. Stir and let the onion sweat on medium heat for few minutes. Stir in black garlic paste [if using].
Add veggie mixture to the pan and stir well. Add salt, oregano and continue cooking until all the liquid from the mushrooms has evaporated, ca. 10 minutes. Set aside.
Crumble tofu into a large mixing bowl, use fork to break larger pieces.
Add walnuts, liquid aminos, mustard, tahini, liquid smoke, linseed, basil. Season to taste and stir.
Stir cooked veggie mixture into the mixing bowl, add tomato pure and mix well to combine all ingredients.
Form 4 patties using burger press or hands.
Heat cooking oil in a large pan and fry burgers for 10-15 minutes flipping them frequently.
Prepare Maple Mustard Mayo by whisking all ingredients in a small bowl.
Serve with accompaniments of choice & enjoy.
