THIS BLACK BEAN BURGER RECIPE WILL DELIVER EVERYTHING YOU’D WANT FROM A BURGER. THE PERFECT TEXTURE, JUICINESS AND GREAT TASTE. SUPER EASY TO MAKE, THESE BURGERS FEATURE BLACK BEANS, SWEET POTATO MASH, SAUTÉED ONION & GARLIC, AND ARE SPICED UP WITH CUMIN, CAYENNE AND PAPRIKA. GENUINELY BETTER THAN ANY MEAT VERSION WE EVER TRIED.
INGREDIENTS ------------------
makes 6 medium size burgers
2 cans [ca. 500 g] black beans, rinsed & drained
1/2 medium sweet potato, cooked & mashed [your best option for a vegan binder]
80 g cup almond flour
2 tbsp [favourite] ketchup
1 tbsp cooking vegetable oil
1 onion, finely chopped / blitzed in food processor
2 garlic cloves, crushed or finely chopped
1 tbsp fresh parsley, chopped
2 tsp ground cumin
1 tsp chili powder
1 tsp smoked or sweet paprika
1 tsp dry oregano
1 tbsp Vegan Worcestershire Sauce [or store purchased, if you’re not making a vegan version]
unrefined salt & freshly ground pepper
METHOD ------------------
1. Preheat oven to 160°C. Spread beans evenly onto a lined baking sheet and bake for 10 minutes until slightly dried. This will prevent the burgers from becoming mushy.
2. Meanwhile in a medium frying pan add cooking oil and sauté onion with salt over medium heat until soft. And garlic and parsley and continue cooking for another 2 minutes, making sure garlic doesn’t brown. Lastly stir in all dry spices and sauté for 1 more minute to intensify the original flavours and aroma of spices.
3. Place in a large bowl or in a food processor with the remaining ingredients: almond flour, sweet potato mash, Worcestershire, ketchup, salt, and pepper. Stir or pulse everything together. Add the black beans as the last step. Mash with a fork or pulse the mixture, leaving some larger chunks of beans.
4. Form the patties. If the patties are still a bit sticky, add more almond flour.
5. Cook the Patties:
Oven: Place patties on a parchment paper lined baking sheet and bake at 180°C for 10 minutes on each side, 20 minutes total.
Pan: Heat a splash of cooking oil in a large frying pan over a medium heat, add the patties and fry 8 - 10 minutes or until cooked through. Flip the patties several times during cooking.
Ninja Foodi or other electric grill: Grill the patties for approx. 5 min. on each side, 10 minutes in total.
If using cheese: allow cheese to slightly melt on patties as soon as you stop baking / frying / grilling them; leave patties with cheese on top in the oven / pan / grill for 1 extra minute with heat turned off.
6. Serve the burgers in [gluten free] buns, topped with your choice of toppings such as: slice of vegan cheese, tomato, vegan mayo, pickled cucumber, sugar-free ketchup, soy sauce glazed mushrooms, salad leaves. Serve with home-made fries, sweet potato wedges or other vegetable fries.
