HERE'S A SIMPLE RECIPE FOR A SPICY BLACK BEAN DIP MADE IN UNDER 5 MINUTES. HEALTHY, CREAMY, FULL OF PROTEIN, VITAMINS & MINERALS AND LOW IN FAT - PERFECT FOR ENTERTAINING GUESTS OR INNOCENT SNACKING WITH IMPROVISED OVEN BAKED CORN TORTILLA CHIPS.
INGREDIENTS ------------------
200 g black beans, soaked overnight & cooked, or canned & drained
2 garlic cloves
2 tbs extra virgin olive oil
jalapeño pepper - amount as per your preference
juice from 1 small lime
2 handful cilantro
handful fresh parsley [to top up your levels of vitamins A, C & K]
6 - 8 cashew nuts [this will add creamy texture]
1 - 2 tsp cayenne
1 tsp paprika
1/2 tsp cumin
unrefined salt
freshly ground pepper
METHOD ------------------
Place all ingredients into a food processor or large jar [if using hand blender]. Process until smooth and season. Add a splash filtered or mineral water if needed. Garnish with fresh herbs, paprika, coarse salt.
Enjoy with Homemade Corn Tortilla Chips, crackers, bread, chicory leaves, pickled carrots or other veg.
