TWICE BAKED BLACK BEAN & CHILLI STUFFED POTATOES

CRISPY, SALTY SKINS, STUFFED WITH CREAMY MASHED POTATOES, BLACK BEANS & HOMEMADE CHILLI SAUCE. DRESSED WITH TZATZIKI & ROASTED RED PEPPER SAUCE FOR ULTIMATE INDULGENCE, PROVIDING AN ORCHESTRA OF FLAVOURS. SERVED WITH ZUCCHINI FRIES.

INGREDIENTS ------------------

serves 2 - 3


2 large or 4 S/M baking potatoes

2 tablespoons high heat oil like grapeseed or sunflower

unrefined salt


filling

100 g black beans [soaked overnight & cooked or use canned]

220 ml homemade Chilli Sauce or other hot red chilli sauce

150 ml cup unsweetened non-dairy milk [such as almond or cashew milk]

soy sauce

unrefined salt

cilantro


toppings

tzatziki sauce, Roasted Pepper Sauce, sour cream, grated cheese, cilantro






METHOD ---------------------


  1. Preheat oven to 200º C. Place oven rack in the center of the oven.

  2. Scrub potatoes with a brush. Rub with olive oil or butter and sprinkle with unrefined salt. Pierce the potatoes with a sharp knife or fork about 3-5 times around each potato and place them directly onto the oven rack. Bake for 1h.

  3. As potatoes are baking, start preparing the filling:

  4. In a large saucepan or wok, warm the black beans with a little bit of water and soy sauce. Mix in the Chilli Sauce.

  5. When ready, remove potatoes from the oven and let them sit for about 5-10 until cooled.

  6. Cut each potato in half lengthwise. Scrape the insides into a large bowl, being careful not to tear the skin [leave a small rim of potato intact around the edge so they don't break when you fill them]. Lay the hollowed out potato skins on the baking sheet.

  7. Now, mash up the scraped out potatoes in a large bowl adding in the milk. Salt to taste and transfer to the saucepan to combine with the black beans. Stir in well.

  8. Using a large spoon, spoon the black bean chilli and potato mix into the center of each potato. Top with cheese [e.g. vegan mozzarella] and return to oven for another 5 minutes.

  9. Serve with a drizzle of tzatziki [or sour cream], some extra chilli sauce, cilantro and a side of zucchini fries.
